Ditchweed as feed

I have an absolute ton of ditchweed that has been allowed to grow on the place I just bought. Can I let cows eat it, let them roam and chow down (or will they even eat it) or should I burn it off, herbicide, or what? Suggestions would be good. This stuff is very big and mature, kind of like the size of a sunflower stalk.

we had the same problem our cow would not touch it and it is hard to kill we called the Government and they came and sprayed it free of charge.
