I have a drainage ditch that runs through the middle of my pasture. The rain this winter and a busted water pipe have made the dirt covering my colvert to wash away leaving it exposed and muddy.
My question is what is recommended to best build it back up where it's higher than ground level? This is an area used daily

dirt/sand? gravel? crushed concrete? limestone rocks?

I would use any of the above. I listed them in order of strength. I've used crushed concrete quite a bit and have been very pleased with the results.

My first choice would be crushed limestone.. it tends to shift with the soil movement. A few years ago we poured concrete over our driveway / culverts and the water has run under the concrete and washed away the dirt it was originally laying on. It's a matter of time before they crack and we'll have to redo them.
 
How about around the water tank and feed trough? This may sound stupid, but is there any reason to worry about the rocks or crushed croncrete getting lodged in the hooves?

We use a layer of a couple of inches of 2 inch rock around waterers. It will eventually work down into the dirt/mud. If you put down a layer of geotextile cloth first then the rock it won't disappear into the mud. Same thing should work around feeders ut don't have any experience with that aspect.

It is a material that allows water to pass through but stops other stuff. I was going to say that it's the stuff in the big roll out in the shop but figured you wouldn;'t be able to see it.

I don;t see why Lowes, Home Depot, or any gardening nursery wouldn't have it, or at least be able to order it.

A similare product called silt fence is used in construction. It is rapped around chicken wire and alowws water out but nothing else.

Here's a thought I had but have not actually done it and was wondering if someone else had, or what your thoughts were on it.

For use around feeders and/or watters.

1) Make mound of dirt 25 ft diameter and about 3 feet high at center with linear slope.

2) Cover with tough plastic.

3) Cover plastic with 1 ft thick finely crushed cliche rock and pack as firmly as possable.

4) Anchor waterer or hay ring in center.

Rain, water, urine etc. may initally penetrate cliche before weatering seals it but when liquid reaches the plastic it will be transported away and distributed around perimeter thus keeping the underlying mound reasonably dry, and stable which will maintain mound shape. Hopefully this would provide a continously well drained and non muddy feeding area.
 
We have rock in our cattle pens.. and yes, if you get a lot of wet weather and the cows have been standing in slop / mud their feet will get tender from walking on the rocks. I make sure I work them slowly if they're tender. If it EVER dries up they should be fine on rock
