Diabetic Thread

My mother always used to say there were no forbidden foods, but you had to religiously watch portion size. A 3 oz serving of any kind of meat is the size of a deck of cards. Other food portions also rationed accordingly.

Anytime I'm in the hospital they put me on the carb counting diet. I get good stuff to eat, just not much of it. But at least I can't easily just go raid the fridge for more. :P

Portion control is definitely a big problem for me.

Just ran across this low carb page on Facebook. Looks very interesting. I especially like the looks of the Revolution Rolls in this recipe.

Decided to try something a little different and low carb for lunch. Makes a good lite meal or would be a pretty filling snack.
Lettuce rolls with sardines in oil (about half a can),1 choppedHB egg (mixed with a bit of mayo & honey mustard), chopped pickled onion and black olives. Two rolls is about 2 gr of carbs. It was very good, though next time I would add more pickled onion or maybe some pickles or green olives. You could also add tomato or red bell pepper without significantly changing the carb content.

FWIW, the lettuce rolls also work well with about anything you would normally put in a sandwich, just eliminates 15-20 gr of carbs per slice of bread.
