Cactus and tomatoes. Its that time of year. The paddles have just reached their perfect size. If you've never tried them I'd highly recommend it.
I cut some today. People with higher IQ's would wear gloves will cutting them but that is beside the point.
Once collected they can be wiped down with a kitchen sponge and rinsed off.
Once rinsed, they need to be trimmed.
Once trimmed just French them.
Cut some bacon up and cook in a frying pan and once done add the cactus and stir on medium heat for four to five minutes. Then add garlic, salt and chipotle pepper and cook for another two or three minutes.
End result is wonderful. Very much like green beans but much easier than snapping and stringing.
