Yes but make sure she doesn't get fat that is what happens if you skip, you also loose money
 
They may go cystic on you and you need to keep an eye on that otherwise that will screw them up.

I was trying to get a herd on a controlled breeding cycle. Held the bulls out so that some of the cows got several months off from having calves. The did breed once the bulls were put in. Some of my favorite cows got real fat and when they did have calves, they did not give much milk. :( At least that is what I will always believe unless some smart person convinces me otherwise ;-) . So I won't do that again.

yes, I can't see why you would want to skip a season. I can however, see why you might want to delay breeding to change the time of year that your cows calve.
