Now that is a colorful plate! We have a craw dad festival every year here. I love the Cajun music and the festivities, but I do not care for the crawfish. A bit too fishy tasting for me. There is always plenty of other good food though! :D

If it's too fishy tasting there's a good possibility it's not fresh and wasn't cooked right. Gotta go to New Orleans to get it done right. Just like around here, St. Louis people get excited for Soulard Mardi Gras. It's just a THEME of Mardi Gras. Comes nothing close to N.O. Mardi Gras. And it has nothing to do with the number of people. Honestly it should be on everyone's bucket list. And Bourbon St. is overrated. You gotta go to the smaller celebrations and parades around the city. The people, culture, and food are amazing.

I got there early enough to see e'm swimming in the ice chest. They were gooooood. Had a zydeco band playing it was a good time.

I'll admit, I like the fried stuff! :lol: It could be what i have had wasnt as fresh maybe. I love lobster and crab, so I really thought that I would like them. But I would expect a difference between a fresh water vs salt water critter. Right?

You are supposed to say "we passed a good time yeah". I've eaten my share of mud bugs, but I never could bring myself to suck the guts out of the heads/thorax.

They serve them every thursday and fri night here at a Mexican restaurant.
They have been expensive this last spring due to the long winter. As high as $70/40lb sack--alive. My son says they have come down a lot since then tho. We used to buy them right off the ponds or Atchafalyia Basin for $25-$35/40lb sack.
 
All boiled crawfish are not the same. My good neighbor and I use the same seasoning and there is a different taste. It might be a little difference in the
cooking style. I don't know, but you can taste the difference. I think it is the pot that I use. It is an old aluminum pot that I have cooked crabs and
crawfish in for over 35 years.
 
Do you and your neighbor both 'purge' the crawfish before boiling them?
(pour them into salt water first--it doesn't kill them but makes them poop and regurgitate some of that kind of stuff out before you cook 'em)

That right there is an important step. We purge them a couple of times..
