Is down to almost nothing. It's like the consumer end of the food chain has decided that quality no longer matters. I'm not even sure if the average consumer even recognizes quality. People's cooking/eating experience nowadays seems to be more about the seasoning than the tenderness/meat flavor. Is butter and garlic going to replace me?

You are pretty much correct. Even tho the price difference between a good select and a mediocre choice is negligible, most consumers will take the select every day and just deal with the less tenderness and flavor by adding 'something' to the select beef. I suspect, that outside of an occasional restaurant, most people in the current generations have never eaten a good choice (much less a prime) steak.
