On a more serious note, where is it written that chili has to be spicy hot? I can eat jalapeños with the best of them but I've tasted some chili that was so hot I could not even taste the flavor.
 
Is it the law in some parts, like N. Mexico, that it has to be hot?

I don't think it is written, but it's probably like BBQ, just depends on what part of the country you're in that determines trends, culture, and inherited preferences ......

Same here!! Heat, does not chili make, tho I do often enjoy chili with lots of fire.
It is the perfect melding of the different spices and herbs, as well as the meat that makes real chili. I don't terribly mind fiery chili, but I want to be able to taste and savor the different spices, onions, garlic that go in to it.
 
Agreed GB, just as with most other foods that can be made a million different ways .... BALANCE. Pizza, lasagna, burger/sandwhich, etc. Not just focused on one flavor or indgredient, but all of it together.

If someone wants flame burning chili, why don't they just squirt their favorite hot sauce in the mouth? A lot less work
