cherry tomatoes

I have done it sucsessfully. Put a layer in plastic bag, vacuum pack and freeze. Have you thought about sun/oven drying them? Once dried you can pop them in olive oil or freeze.

how do you sun dry them? Just put them in the sun, then put them in olive oil? How do they taste when they are dried?

I prefer sun drying to oven drying even though it takes a while longer, in my opinion the tomatoes seems more 'tart' and the taste more concentrated than oven dried. It's really quite simple as long as you keep them away from moisture (dew, rain etc), insects and dust so would suggest you bring them indoors every evening. Cut tomatoes in half and spread them on a screen, sprinkle with salt, cover with fine net and place in full sun for a couple of days (not too dry, they must still be pliable).
Once dry either place in plastic bags, vacuum pack and freeze or place in bottle with herbs and olive oil.

Noooo, don't take the seeds out - else there will be almost nothing left ;-) .
I know some people remove the seeds when they are drying bigger tomatoes but I don't, I think they add texture and I have not noticed any difference in the taste. Anyone else have a take on this?
Have fun :D .

Yes, but same as yours. Never remove tomato seeds. Always leave them in anything you make with tomatoes and eat them. Tomato seeds are good.
