I have actually been contimplating a Char bull to rotate across our Brahmans. The prettiest animals I have ever seen were Brahman x Char cows. They were man killers but they were beautiful.
Yellow/Tan can be Char crossed w/ anything red. Way I understand their colour is the white is a diluter. Two white genes to make a white animal, one dilutes the colour gene from the other parent. We breed Charolais to primarily black cattle and get silvers and about half tans since the cows carry the red gene too. Red Simmental cross cows give a tan every time, often w/ a white face. As far as temperament goes I've seen placid and crazy Charolais just like any other breed.
Char cross sells great up here, consistently near the top of the market. Even when they aren't the favorite the extra pounds tend to add up.
