I wonder if some of you might help me interpret carcass data on a feedout study on Dexters (seriously, please don't laugh!). (1) What is "dress %" and what is considered good? (2) What's the avg. ribeye area on an Angus or other large breed? (3) What is "KPH %"? (4) What is "REA/100# Car cwt"? (5) What is "Yield Grade"? (6) What is considered a good "ADG"?

I have some results, but need some guidance on interpreting them. Thanks for your help!!!

Dressing % is the weight of the warm carcass vs the live weight. Industry standard is 62%, 59-64 is a good range. (2)

Not sure of the average, but Cargill has a limit of 12 sq in on their sterling silver program. Many cattle have 12-15 in ribeyes at slaughter.

KPH% is Kidney,heart,pelvic fat % and tells how much wast fat is in a carcass. This measure affects yield grade.

> cwt"? You have an extra cwt in there it should be REA/cwt carcass it is ribeye area per 100 pounds carcass weight. Live average is 1, so carcass average should be 1.4

(5) What is "Yield
> Grade"?

Yield grade tells how much red meat compared to fat the animal has. YG 1 is leanest YG 5 is fattest. Anything higher than a 3 is undesireable, yg1 with a choice marbling is very hard to achieve.

(6) What is
> considered a good "ADG"?

Average gains in a feedlot are currently around 2.5 pounds a day. I consider good to be 3.5 or better.
