Just found out via my wife that one of our animals lost the long end of a toe/hoof. Other than being uncomfortable are there any problems that could arise from this? He's set to be slaughtered soon, we just need the weather to cooperate better with us.

If a toe snaps off, most likely the entire hoof is under-run and out of shape from an abscess that wasn't noticed previously and all that's been lost is some dead tissue.
Animal for slaughter soon - as long as he's not seriously lame, I wouldn't worry too much.
If it was a keeper you want to examine the hoof and fix it, cut off the overgrown and dead horn so that the foot bears weight correctly and wears evenly. That's a job for a vet or someone experienced at hoof trimming.
