I am sooo envious. We just can't get stuff like that around here.
We were exited about getting some nice size beetle kill pine logs to build some furniture out of.
Depending on the type of table you want to build, I would have it sawn to minimum 5/4 boards up to a proud 8/4. The 5/4 will surface to a 1-1/8" the proud 8/4 will surface to 2".
If you want solid legs that won't have to be glued up/laminated, have some of it cut to a proud 16/4. That will leave you 4" blanks for turning or shaping. You can also turn some lovely bowls, etc from crosscut slabs while it's still green.
