Beef Processing/Slaughterhouses

It would be helpful for newbies to hear the good and bad.

Cutrer's will hang your beef as long as you want. This is a great service not all processors provide.

Hanging beef gives it the superior taste, texture, and flavor. Some of the closer operations only hang for two days.

Please contribute your experiences and links. It can be daunting trying to figure it out without the assistance of old timers.

Prices seem very reasonable too.

Big Young we are in a good spot for sausage. My favorite is Andouille sausage on pizza.

SoB those are the best prices in a 3 hour radius. The cow calf producer can make money, the slaughterhouse makes money, and the average guy can get good beef cheaper than Walmart. They are always busy unlike the local place that never has a customer...

$10.50 for an extra week of hanging..sounds like a bargain to me.
