We have a 35 acre coastal hay field that has been overrun with some kind of grass that the cows dont like to eat very much. My question is what do I need to do get rid of it and what would kind of cost am I looking out at to take care of this?

Most anything that you would use to kill the grass may also kill the coastal. Check with somebody that sprays herbicide for a liveing. Many of the fertilizer companys do this.
Do a soil test and fertilize acordingly. Coastal may choke the other grass out if fed properly, and you get rain.

Show us a pix of the grass or take a sample to your county agent.

Do not bother with a picture. Grab a handfull of that grass and head on down to your local ag store, or county ag rep. Get them to tell you what that grass - if it is indeed a grass - is.
Then ask them if they have any suggestions on how to get rid of it.
Any good quality seed and fertilizer place will also likely have someone on staff who is trained to do this for a living - and they will tell you for no cost.
