What factor(s) could cause my beef from a local farm to taste & smell ‘off’ this time around?

If halves were touching in the cooler, it will taint beef

    Thoughts on these bulls

I expect bulls of any breed to look like bulls. You don’t see any crest at all on these animals. Pass on them

    When to cut

Seldom did I cut unless they were being kept for show steers. Get to 400 lbs and ship them I worked. It made better sense for us as our poor summer grass pastures just didn’t get it done. Ran more cows per acre and it was easy on them to get them to that weight

    Eared steers

There was some disposition problems with some bloodlines of Limi’s. Use of the disposition rod can steer you around that problem. Also he seems to be selling the offspring, and don’t forget Brahman cattle don’t like being penned

    Eared steers

Well at least you’re selling eared cattle in March. If sold in the fall you would have taken 40 to 50 cents a pound hit. Livingston like Raywood doesn’t have enough buyers for this type of animal. Huntsville would be your closet best market. Never tell the the barn to just mail your check, you...

    Mixed bag

Depends on the year, I have seen it in full spawn around MLK and still going on some years as late as May. Temp and water clarity are the big factors. Fish below the dam are always a month to 2 months later than fish above
