C....mom didn't leave the recipe laying around did she? My aunt (now deceased) did it once and darn they were good!! They were pretty in the jar too... would love to find someone with a good recipe for it...they reminded me of Bread & Butter pickles but a little more syrupy.
 
My mother used to make what she called "watermilon preserves".
I think she made them from the rinds,I do know they were plenty tasty.

Cut these out of a newspaper years ago. Never got around to trying them out so I don't know if they are any good.View attachment 1

Hey Wisteria, that first one sounds like the one Mom used. They were great! I didn't end up with Mom's recipes...long story... but will see if my sister in law has it. I will see her today.

I know a gal who makes them (she never gives up a recipe though), anyway hers have a ton of jalapenos in them. You get hit with a sweet taste and than you just plain get blown away! :o They are good though. :nod:
 
Making watermelon pickles is very labor intensive. You have to peel the rind off the white part and then be sure there is no soft tissue on the inside. Made them only once in my lifetime and never again.

I think this is how my aunt felt about it too... I remember her doing it and that she had gotten the recipe out of the newspaper. She was all excited because they had watermelons out in the garden. I remember they were just so good... and as I mentioned, really pretty. The pieces that still had a little bit of a pink blush on them looked so nice in the canning jars. She did say it was a pain-in-the-butt though. Thanks again.
