What's the best way to cook a large walleye? I fileted it and the filets are around 2 pounds each and WAY thick. Breaded it and fried it last night, but there has to be a better way

He77 with one that big you should have had a taxidermist have a go at it!

Those big ones don't make very good eating IMHO. We cook walleye by the method you mentioned above, pan fry it without any breading in butter, grill it, or bake it. My favorite method is breading and frying.
 
That is a big one. Bake it with butter, garlic, onion, and sun dried tomatoes (trust me on that). Used to do that on canoe trips up in the Boundary Waters over a camp fire. Must be accompanied by large amounts of whiskey.
 
Breaded with lemon pepper in the flour then dip again in egg and milk and pat incrushed saltines then deepfrie there is no better . Oh it works best with fillets sliced partially froze.
