Turkey both recipes

Well tonight Is the first night of bird left overs, but when we get done picking through the turkey for sandwiches ect. I want to try to use the carcass for both..... But I'm a bit stumped as to do what with it, any recipe suggestions?

ok your wanting to make broth,the only way i know is to boil it like you do a whole chicken.an see what happens.

Chunk up your carcass, throw in any remaining wing or leg bones; bring it to a boil, and simmer it for several hrs. with some celery, a bay leaf, sliced up carrots and a little onion. Then strain the big stuff out. I put the broth in quart jars and freeze it, if it doesn't get all used up in soup. Good stuff!

When I crockpot a beef roast, I also save the juices, jar/freeze them, and I have a good base for the next batch of soup or stew.
