Research shows that beef produced by heifers is more likely to be tough than beef from steers, but good pre-harvest management practices tailored to heifers can help assure consumer satisfaction. A new report from NCBA titled "Pre-Harvest Factors Affecting Beef Tenderness in Heifers" outlines some of these practices. The report, written by Colorado State University animal scientist Daryl Tatum and funded with Beef Checkoff dollars, is available online or in hard-copy form.
