Me and my partner are thinking about breeding Brahman cows with Hereford bulls to produce tigerstripe heifers that can handle the heat down here. We can sell the heifers for a premium, but the steers will more than likely get docked. Would it be wise to retain ownership versus selling them once they are weaned?

It depends on the genetics of the cattle you use. The Brahman breed was doing some evaluation to see what bloodlines gained and graded and which didn't. You might want to send some through a retained ownership program and see how they do. If they do well, you'll probably be better off retaining ownership. Or at least you'd have some data for the buyers to look at.
 
It has been my experience when we raised tigerstipes that if you averaged out the heifers and bull calves you were still ahead of the game.
