What should their midsections look like? At our barn their are steers that looked like the swallowed a barrel, then there are more moderate steer, they don't have a flat rib, they just don't look like they swallowed a barrel. Is one look prefered over another or are they both acceptable?

also any other selecton tips would be appreciated

You want one that is nicely filled out all around but not fat. Pot bellies are acceptable to a point at some shows like if its that leftover weight you couldnt get off. But its more upon preference, feed, genetics and breed.

Thats why theres heavy, medium and light weight classes at some fairs. All steers are different.

heres some pictures

deep bodied, this is what you want (red hot steer from Duxbury Cattle Company 2005)

sallow bodied, this is what you want to stray away from.
This might not be the best picture of one, but the best that I could find on google.

I don't know about in holistiens, but pot bellies are not acceptable in club calves. You never want one on a calf.

Funny.

I've seen it happen on club calves. They dont exactly place at the top of the class but they do ok.

Of course you dont want your goal to be looking toward a pot bellied in the first place.
