Been busy the last couple days 
Made some salami and pepperoni. Didn't have any casings so I just made some rolls. Then I had some bacon curing from a butt that was ready to smoke. And finally I smoked a butt just for the heck of it.

It's real good. Kind of a cross between Canadian and regular.
I've already got a list of uses for it. Top o the list is blt's. Love a good Blt.
On the next batch of salami I was thinking bout rolling out a bunch flat, adding chopped Jalepenos and a bunch of that high melt cheese. Then roll it like a log by hand.
Ever try something like that yet?
 
i know better than to look at food posts because they make me real hungry.but it truely does look good.
