Risotto

Does anyone make risotto ? I am thinking of trying it, but it sounds a little complicated getting the right consistency to the rice and the sauce.
 
I have made it a couple of times and it isn't difficult, but it does require constant stirring, which is not condusive to most of my days. :roll:
As long as you've got the time to pay full attention to it and prep all the ingredients before you get started, go for it!
 
Thanks FW, I am making grilled wild salmon for dinner tonight and thought I would try risotto with it and some fresh green beans . That is if hubby is home for dinner.

That sounds great at what time should I be there? I'll bring the wine.
 
Yum, that sounds like a great meal. But when you say "grilled" I hope you mean a grill pan or some sort of indoor grill. If not, please post a picture of you grilling outside in your atrocious weather. :shock:

MO...you've never had "blizzard grilled salmon"?? :lol: :lol:
 
I can't get arborio rice around here. Have to wait til I get to the big city and see if I can find it. We had duck risotto in Denver when we were at jr. natls in 08, it was so good.
 
Dinner was great. The risotto turned out very well and it wasn't that hard to make but like FW said a lot of stirring. I used a recipe of Jamie Oliver's and added mushrooms, white onion and spinach to it. I think I may have to try it again sometime and the freshly grated parmesan aggiano cheese on top right before serving really added to the flavor.

Mo ,we use our BBQ in the winter all the time, especially for steak.. :) As long as we can fire it up it is good to go. When I took some animal husbandry courses a few year ago hubby was here by himself for a few weeks and the average temp was -25 he Bbq'd steak just about every night for himself. A little cold weather doesn't stop us canucks for grilling .. I have done the salmon on broil in my oven before and it is pretty close to the bbq.

Knersie I think your body would go into extreme shock if you were to be in our temps right now. Either that or it would be like what they have at those fancy spas. Extreme hot and then extreme cold. ;-)
 
Hillsdown, you can do a good risotto in a casserole dish in the oven too - no stirring needed. For a quick but delicious meal, I often lightly fry a purple onion in olive oil, add a cup of arborio rice and let is brown lightly, then toss in a can of chopped tomato (or fresh tomato), some dried or fresh basil and a cup and a half of water. Then pour it into a casserole and add the can of tuna. Cook it in a medium oven for half an hour or so until the moisture is absorbed, stir in a bit of butter (and sprinkle some parmesan cheese, optional) and you have a yummy quick dinner. My hubby loves it and it tastes even better the next day.

Jill you had me until the canned tuna.. :P

Sounds good, I will give it a whirl minus the canned tuna. The only tuna I like are fresh tuna steaks grilled or in sushi. :D
 
Okay, HD, I promise you took the words right out of my mouth...er, keyboard! I don't even like fresh tuna though!
 
I ended up making the rissotto for lunch - yumbo! We're holed up in the house, cyclonic winds and rain, so it just hit the spot.
There's no fresh tuna to be had in outback oz - I havent made it with chicken but I'm sure you could. You could also replace some of the water with white wine!
