What is the most docile breed? What breed makes the best project steer?

I an thinking about buying a steer next year for 4-H. I have alot of questions!
What is the best breed to use for a market steer? Angus or Angus/Maine Anjou? What's a fair going price for steers right now? I've heard anywhere from $800 to $1500 from a rancher and a 4-Hers.
How old is a calf when it's weaned? How old are the calves you buy for market steer? A year? And judges prefer a solid black animal? Why?
Is it a good idea to buy a heifer angus for breeding (so I wouldn't have to sell her at the auction)? And heifers are classified as any cow under 2yrs? What to look for when selecting a beef breed breeding heifer? What's a fair going price for a breeding angus heifer?
Are cattle very stubborn or somewhat docile? The angus breed- docile or hostile?
Also, in beef showmanship, you wear a western shirt and black jeans, and in dairy showmanship all white? I noticed with dairy goats they wear all white, too? Why?

Also, what is a good feeding program for a steer? Alfalfa hay supplemented with how much grain? Any particular brands of grain you recommend?
I LIVE IN A COLD CLIMATE. We get alot of snow in the winter.
 
No way of knowing what climate you live in. Don't even know what state or even country you live in. Everyone is going to have a differing opinion based on their climate, past experiences etc.

I didn't vote since I don't have enough info to decide.
