How much would you sell a PUREBRED Brahman- heifer and/or bull calf? Also, if I start working with them from day one so, they aren't as jumpy when i do sell them?.

There are too many unknowns in your post to give you an answer.
One being the weight of the animal and is it registered or not.

For a $$ value Google “ cattle auction “ for your town and state and you should be able to fine a sale barn that sold some similar animal as yours.

I'd suggest you check out http://www.cattlerange.com/ and try to get a rough idea of how much people are asking for similar animals. You don't list your location but what Sir Lion suggested is a good idea.

That was good advice better have a he!! of a pen as well cause they can jump and run like a deer.
They will test there surroundings. Now once she knows she is your cow you can lead her anywhere.
Son never force a brimmer you lead them.
