Pecans, pecans and more pecans, I think I will see them in my sleep. :banana:

The wind from that dust storm yesterday brought them down and all the in-laws and outlaws from GA came up to pick pecans today.
I ended up with 5 5 gal buckets full and they took home 11 buckets.

Now all I need is a good pecan pie recipe. Or any other recipe that uses pecans. Or as they say in GA pecons.

We are having a bumper pecan crop too. My husband has been shelling them and I freeze them in vacuum pack bags. I love them in everything. Deserts, salads and for breakfast in oatmeal and cereal.
 
I find it interesting that yours in the south are ready so early. I farm pecans and it's another month and a half before harvest. :frowns:
For a real treat, try dipping them in honey. I haven't figured out the perfect honey for a pecan yet as they're already pretty sweet but I do know that a dab of citrus honey on a walnut half will melt just about anyone.
 
I have been looking for a new pecan picker upper. I also have a good crop.
I just saw the roller type pecan picker and want one. I am using the push down spring type.

Any suggestions on brands?

It will be November before ours are falling good. Last year was one of the largest crops ever, not supposed to make two crops in a row but some trees are loaded and some are barren.
Ever tried Tupelo honey?

Just one spoonfull from a guy that was here for the almonds. It was good but not a fit for pecans in my opinion. I'm going to make some dark buckwheat honey this spring and try that.

A leaf blower and a yard rake do great.
The leaf blower is a stable here when gathering pecans. I always have a big ring of leaves around my trees.
I do not like the rake because of all the trash I have to sort through.
Right now I am using the one at a time picker upper, mostly because I do not bend as well as I once did.
I saw a guy using the roll type picker and it was fast. You do not have to aim at a pecan, just roll over an area. This year was the first time I knew they made such.

I've got a roller and its not fast enough. I'll get them all in a pile and then set on a bucket and pick them or late in the evening use the rake to pick up leaves and all then go to the carport in the light and sort them, can set in a chair and do that.
 
Had some roasted pecans at a friends house today as a half time snack.

She place them on a cookie sheet with a pad of butter and lightly sprinkle them with Worcestershire sauce
and lightly roasted them while mixing them around occasionally while roasting.
I enjoyed them.

I've tried a bunch of different recipes but still like the one on the light Karo bottle best. :heart:

Just dump 1 cup Karo, 3 eggs, 1 cup sugar, 2 T. melted butter and a teaspoon or two of vanilla and mix up then add 1 1/2 cups pecans and pour into a frozen Mrs. Smiths pie shell. Bake @ 350 for an hour. Takes 5 minutes to make and looks and tastes fantastic!
 
Add a little tartness to that pie....

I am going to use Macons recipe for my Christmas gifts. Last year I gave gingerbred, shortbred and sugar cookies to all of my friends and neighbors but this year I am making single serving pies in decorative masons jars . Pecan pie will be a huge hit :D

yesterday I put out 8 round bales and then checked the pecan trees. I picked up 3 gallons under one tree and it looks like not even half the pecans have fallen yet. I have 14 huge old growth native pecan trees that produce. I have clusters of trees in the the thicket that do not get enough wind flow to produce.

No trees are hybrids. Just the old tiny natives. The pecan halves were tiny but flavorful.

What? Your going to put a pecan pie in a Mason jar? Isn't that kind of like building a sailing ship in a wine bottle? I want to see a picture when you get one done.

Will definitely post some pics when all done. I bought 4 dozen mason jars to fill up ,so just need a little motivation a little closer to Christmas . :help:
 
Ok, after seeing the jars, it makes sense. Didn't know the short squatty Mason jars were available. Sounds like a project!
 
HD - I thought of you when I popped into a confectionery earlier today and saw Pecan Fudge in little jars, quite novel! :D
