Pancetta

Just got done curing and now to age it.

Looks good. I like pancetta but I just don't think it can hold a candle to just plain old bacon.

Never had pancetta so I figured if I screwed it up I wouldnt know any different.

At the house we will probably eat 10 lbs of bacon for every pound of pancetta. Pancetta is prettier though.

Thanks to Vic we eat pancetta all the time , we may not have bacon on hand but I guarantee there will be pancetta ;-) I buy it buy the rolls and it goes fabulously with a ton of things especially pasta .
