Does anybody know how to make home grown jalapenos taste like the ones you buy in a jar at the store. I'm talking about the ones you would put on nachos or burritos, not the candied ones. I got a lot of fresh ones and I'm not a big fan of the fresh jalapeno taste.
 
I just pour boiling hot vinegar over them and seal them in a jar.

Sliced or unsliced.

Well I took some of our jalapenos and canned them like yall said. I tryed some last night and all I can say is that I don't have any sinus problems anymore. Those were the hottest jalapenos I've ever eaten! Good flavor with the vinegar though. Thanks for the info.

You can remove the seeds and "veins" inside the peppers before canning if they are too hot.

That juice is great on greens, salads, and a bunch of other stuff.

My wife wants to know if it made them taste like the store bought ones.
 
Actually they turned out to taste almost just like store bought ones. They are not as tender but I guess thats because its just been a few days since I canned them. I will probably can some more.

If your pour the vingar over the peppers in a pot and bring them to a boil they will soften up some.

I just like mine crunchy and firm.

Keep experimenting, you'll find the way you like 'em.
