Anyone else's hot dog label start with "mechanically separated chicken"?

What IS mechanically separated chicken? why bother mentioning it? they don't say "mechanically separated beef" or pork, or lamb. :???:

More of a chance of bone splinters with mechanically seperated meat doesn;t matter of it's chicken or beef.

I think "mechanically separated" is a nice way of saying "Throw it in a big grinder."
