Hay fields going into winter

After getting back into cattle after several years, the hay fields had been neglected for around 10 year aside from being mowed off once a year. Last September, we disked, sewed Fescue and Orchard Grass, and fertilized this March. I must say, it is much improved from the previous years.

What length should a hay field of mainly Fescue and Orchard grass be going into winter that will not be grazed? Should it be clipped short, have a few inches growth, or tall?
 
First off, I know nothing about your grasses but here I always like to leave about four inches of growth as insulation for the roots system when I go in the winter. This is recommended for my hay type. I know yours is different and more cold hardy but its still a plant and I think some protection for the roots would be good. :2cents:
