thumbnail_daphne flymask.jpgI learned to make 7 kinds of cheese, plus yogurt, butter and ice cream. I did not want to use calf rennet because, ya, I'm a vegtarian because I love animals. This is just my personal thing. I buy and cook beef for my husband. The veal calf industry and calf rennet has fortunately taken a dive. People don't slaughter them for veal anymore. Because of beef prices it is much more profitable to grow them out for quite a while now. So I use non rennet, various cultures and even acidity to curdle the milk. Never is the cheese bitter. It is always delicious.

I don't buy the anti GMO thing either. GMO food does not cause cancer. There is no telling what kind of nutty ideas the public will take hold of. They are using CRISPER in breeding dairy bulls for AI now. I say go for it.
