free choice feeds and self limiting feeds?

I've heard mentioned that people feed some of their cattle free choice grain. Does that really mean, dumping a bag in a bucket and letting the cow eat as much as it wants anytime it wants?? If not, how do you feed free choice? What works best for you?
Also, what is self limiting feeds? How do the cattle limit themselves?
Sorry if these are stupid questions.

I have two 6 month old dairy calves that are about 400# each and we want to take them to the salebarn come april. What/how should we feed them to maximize their price?

We use cottonseed meal/salt. Different ratios for different applications. Works well for us. I dont know about dairy calves though.
