So I've got 4 months till my butcher date for 3 calf's. They currently weigh avg of 1000lbs and eating 3 five gallon buckets of a 3 way commodity mix and free choice hay. Mix is cracked corn bean hulls and corn gluten. I think it's around 16% protein. Is this gonna finish them or should I start to add some whole corn to their feed also.

That's the ration I get to feed cattle, my ration is made up of 1/3 of each. To finish calves I like to get them on whole or cracked corn. I prefer whole corn but can't always get it, so I go with cracked corn then. Sometimes I've found it hard to get them to eat just plain corn so usually to keep them eating I will mix the corn with the mixed ration. I always like for them to get into eating corn with half or less of the mixed ration. Even then at half and half they are still getting more corn with the corn already in the mixed ration.
I have heard that corn gluten can cause an off flavor in the beef, but as long as it is just a small percentage of the ration then it should be ok.
Generally we don't notice anything but one steer I fed out during a time that my ration was made up with corn gluten being the highest percentage of any feed stuff in the ration, and I didn't dilute it with corn other than the little bit in the ration and I got a hint of maybe an off taste.
I think it sounds like you're right on schedule with them and the timing would be good to add some more corn to cut the protein and dilute the amount corn gluten.

I haven't priced corn yet. We built a feed bin out of a chemical tote. Plan on filling it with corn and getting them on a heavier corn ration and save the other feed for the sheep

if I did my math right, you've got them eating about 3%. If it ain't broke don't fix it. I think at this point you're got them cranking hard enough that I wouldn't change their feed. Just up it as they grow to maintain that 3%.
