2 1/2c sugar
1/2c. light corn syrup
2 eggs white
1t. vanilla
1-2 drops food coloring I use red to make it pink.
1/2c chopped nuts
in a heavy sauce pan mix sugar, corn syrup and 1/2c water. Cook and stir over meduim heat til boiling. Clip candy thermometer to pand and cook over meduim heat with out stirring til it reaches 260 degrees, hard ball stage. Remove from heat and remove thermometer.
In a large standing mixture beat egg whites til stiff peaks form. (Eggs whites have tips that stand straight up and fall over just at the tips.) I get this part started first.
Gradually pour hot syrup mixture over the egg whites. Now I was taught to do it with the mixture going on slow so as to not splatter the syrup everywhere.
Add vanilla
Beat mixture on high until it losses it glossy look. It will be stiff.
Add nuts
Drop by the spoonful onto wax paper and let cool.
