Neighbor just gave me some of his deer sausage. I was just wondering what yall suggest for a type of cheese to eat with the sausage. I plan on going to the store tomorrow and would like to buy two or threes different cheeses to compliment the sausage. Thanks in advance. Justin
 
Havarti, for creamy & buttery.
Sharp or Extra Sharp cheddar, for some tang.
Provolone, for a smokey snap.
Also highly recommend a porter or stout beer and some sweet red grapes. :tiphat:

Already very smokey so I'm thinking provolone is out. Definitely will do the sharp cheddar.

It won't be much cheese, just thin slices.

Glad you mentioned the eggs. I'm already thinking of some different experiments with egg'n'the hole, egg sandwhich/bagel

Pick up or make some really good mustard too and you'll soon be at heaven's door. I'd suggest a brown with plenty of seeds in it. If you have a variety to choose from look for the one that has the most sugar or honey in it.
 
Muenster is one of my favorites I also like pepper jack. I bought some smoked gouda at a gun show one time and it was amazing with sausage.
 
I usually don't like cheese or peppers in my summer sausage. The same gun show where I got the cheese there was a guy selling sausage with cheese and pepper and he convinced me to try a bite dang that was good I bought the last one he had. I ate that sucker up in a few days. Shame I lost their business card can't remember their name or where they are located. Yes I buy a lot of junk food at gun shows summer sausage, sausage, beef jerky, cashews, peanuts, almonds, pecans, cheese and anything else that looks good.

Son in law gave me some the other day that had cheese and jalapeno peppers in it. Dang it's good.

This has those dang peppers in it too. I hate those things but the sausage is so good I tolerate them.
