Deer pepperoni

Trying a pepperoni recipe with straight deer. I'm curious to see if it holds together and how it tastes. Just used 2 lbs of grind, and hand formed without casings. If it pans out I'll get some more casings and make a bigger run of it

My experience is you need some pork or fat ,25% or so.

I've not made pepperoni, but for trail bologna and other recipes I never use less than 33% pork any more. It makes a huge difference. I'll be curious how it turns out. Something I've always wanted to make, but never have.

It turned out great. The 1.5" hand sticks held together nicely with a single grind and the medium plate. Maybe just a tiny bit crumbly on the ends.
