This may sound like a dopey question, but, what exactly is a composite when referring to cattle. Is it a mixed breed animal? Such as a cow/steer/bull that is part Herford part Shorthorn part Angus? :?

Yes, a blend of breeds most commonly a breed created from mixing Brahman and English or European cattle. Bred several generation before the animals breed true. Brangus is 3/8 Brahman and 5/8 Angus; Simbrah same ratio, 3/8 Brahman and 5/8 Simenthal. Beefmaster is a composite of three breeds, cannot remember which ones, maybe Shorthorn and ________ and Brahman. They are 1/2 Brahman. Etc.

Just a fancy way of saying cross bred animals.

To a certain degree, but not really.
A composite is a "breed" of cattle that have been bred long ewnough that when bred to the same composite breed true. Gert, Brangus, Beefmaster, I think the other part of Beefmaster is Hereford but could be mistaken. Ollie has already made reference to my lousey memory.
