He teaches the science and the reasons you do certain things and if you understand these basics you can do near about anything in the kitchen. You rarely see him anymore though. You named my two favorite shows, I'd put good eats over triple D, but really like them both. I like sandwich king also but have a hard time with the host. The risotto I mad a while back came from watch good eats.
I agree with assessment of Alton Brown, when I see him hosting Iron Chef he appears thin and maybe not doing well, but then again who knows.
