I was wanting to use a young bull to breed 2 herford cows and then butcher the bull. Does anyone know if that will affect the meat in a bad way if the bull just breeds 2 or 4 cows.

Probably not. Most people don't eat that part of him, anyway.
 
Most of the reading I've done recommends removing the bull from the cows for about 30-60 days before butchering. That's what we've done with bulls we've had proccessed and the meat was good.
 
I have a small herd of Dexters. We have found no difference in butchering 18 month old bulls and steers. The meat from both had the same marbling and texture. Since we know that they will be butchered at that age, it saves some vet work, and stress on the bull calves.
 
Do you cut them some time before slaughter or process balls-and-all? Will have used up our bull this spring and was wondering if we should sell him or put him in meat packages.
