Does anyone know of a book on feeding and back grounding cattle? Something like Feeds And Feeding by Morrison but more up-to-date.

Contact your land grant unisversity or local extention service. They should have more than you would care to read.

There are lots of general books on feeding. An issue in western or northern ND is that some folks like to use unusual rations like barley, peas, oats... vs. corn. So goggle on your local feed stuffs and then talking to the ND State experts.

The conventional wisdom is you can not make money back grounding. Goggle for these articles and for Harlan Hughes. If you have calves you can push, and you know how to get an ADG of 2.5 to 3.5 pounds, then the conventional wisdom is not true. Run a quick budget at several different rates of gain for a check.

I used to live in SE ND and I'll be back for the pheasant opener. PM me if you need help thinning out your flock!
