Had a calf die of blackleg. Recently took a cow to be butchered (putting it in the freezer today).
Is it safe to eat or should we have it tested?

Had the cow been infected in any way,the meat inspectors at the abattoir would have picked upon it.
A slaughtered animal with any sort of infection starting will have an enlarged spleen, and the carcase will have bled out badly, giving a dark red appearance and sticky to the touch, and depending on the infection, an enlarged or discoloured liver.
Any of these symptoms, as well as discolouration(such as jaundice)in a home slaughtered animal should be investigated.
Trust this helps;Andy
