I was just wondering if all beef hides get made into leather. Seems like there would be a huge surplus of leather if this were so. Anybody know?

Leather usage is huge, worldwide. I doubt 100% of hides get used, but likely it is 99%

Maybe someone has a stat for this? I'd be interested.

Almost all of the US beef hides are exported. China, Korea. and lot of other country's. Then made into all sorts of stuff, mainly clothes and shoes. Then the finished product comes back and we buy it in Walmart.

Yes, beef hides get made into leather. But US hides aren't especially valuable because of brands, grubs, etc. There aren't a lot of tanners left in the US so most of them go overseas to be processed, as mnmtranching said.

I can't imagine all the hide it takes to make shoes and boots.

Seems like everytime I turn around someone here is buying a new pair.
