It is a type of yucca- Yucca filamentosa. Commonly called beargrass. Aside from being 6 feet tall, the tops and stalks look exactly like asparagus at this stage of development. I'll post a pic of it later on when it's blooming.

I have some here, that I brought back with me from San Angelo in '06.
It was just about 12" small, I planted it in the yard and I accidentally hit it with the lawn tractor and broke the top off of it. Planted the broken off piece in a corner outside the cowpen and it has really taken off since. The part that was left in the yard has grown a lot slower, barely 36" tall now.
Not a good picture but it's what I had handy. I need to trim it back with my pole saw as it has branched off and is pushing now on the cowpen.
yucca. around here the cattle and deer will eat the stalks before they ever flower, unless they are the tall soaptree variety that get over 10 feet so the flower stalks have a chance. you can roast and eat them when they first start sprouting (or ferment and distill, though agaves have more sugars and are better for that kind of project)
