Welsh Beef Fillet Steak
With Dauphinoise Potatoes

4 x 115-175g (4-6oz) Welsh Beef fillet steaks
butter for greasing
450ml (3/4 pint) double cream
150ml (1/4 pint) milk
1 x garlic clove, finely chopped
750g (1 1/2lb) potaoes, peeled and thinly sliced
3 tbsp fresh flat leaf parsley, chopped
2 tbsp olive oil
salt and freshly ground black pepper
METHOD:
Preheat the oven to 150C/Gas 2. Butter a shallow ovenproof dish. In a saucepan, gently heat the cream, milk and garlic together. Remove from the heat and add the sliced potatoes. Add the parsley and turn to mix well. Season with salt and pepper. Transfer to the dish and spread the potatoes out evenly. Pack down with a spoon and bake for about an hour, until the potatoes are tender.
Season the Welsh Beef fillet steaks with black pepper. Heat the oil in a large frying pan, add the steaks and cook for 3 - 4 minutes. Cut out portions of the dauphinoise with a large round cutter and place on four serving plates. Sit a Welsh Beef fillet steak on top of each tower of potatoes and serve immediately.
