I hope these studies used the same baseline management methods such as time on feed, age, same breed composition, same environment, etc . I wish they would have stated it though.



Checkoff report looks at pre-harvest heifer management to minimize variances

Tenderness, the gold standard for beef products, is a complex trait influenced by a variety of factors, many of which can be managed to reduce the incidence of tenderness problems in the final product. One inherent tenderness variation often overlooked in pre-harvest management plans, however, is sex classification, according to a new beef checkoff-funded report.

Young, grain-fed steers and heifers make up 80 percent of cattle processed each year in federally inspected U.S. beef plants. Steers comprise about one-half of the total federally inspected harvest, while heifers represent about 30 percent of the slaughter mix.

Heifers typically outperform steers in marbling and USDA quality grade, but product tenderness usually favors steers, according to Pre-Harvest Factors Affecting Beef Tenderness in Heifers, a beef checkoff-funded report by Colorado State University meat scientists J.D. Tatum, Ph.D., S.L. Gruber and B.A. Schneider.

“Beef product tenderness has been determined to be a very important component of consumer satisfaction and, therefore, research that gives the industry information to improve our product’s tenderness will ultimately improve demand for beef,” said Bill Rishel, a Nebraska producer and chairman of the Joint Product Enhancement Research Committee.

Authors reviewed 10 studies conducted between 1985 and 2006 and compared Warner-Bratzler sheer force (WBSF) values on the major muscle in the rib and loin for both heifers and steers. In eight of the 10 comparisons, the WBSF was significantly higher for heifers than steers. The standardized mean sex effect on muscle WBSF values, computed across all 10 studies, was 0.25. (the lower the WBSF value, the more tender the beef).

Among identified factors that could account for the difference: (1) Differences between heifers and steers in levels of enzymes that break down bovine proteins and “age” beef and (2) The effect of estrogen on heifers, making them generally more excitable and susceptible to pre-harvest stress. Evidence also suggests that intact heifers have higher hormone levels compared to steers and spayed heifers, resulting in tougher beef from the intact animal. Other studies, however, have suggested that spaying has little effect on heifer beef tenderness.

Management techniques include estrus suppression, non-aggressive handling and careful use of finishing implants, if these products are used.

A SILVER BULLET TO IMPROVE CARCASS QUALITY?
A considerable amount of time and effort is expended on improving carcass quality through genetics. Wouldn’t it be nice if there was something that could simply be added to feed to do the same thing? Previous research showed that marbling scores were higher in carcasses from grazed cattle with supplementation of Tasco, a feed additive produced from brown seaweed. Texas Tech University and Auburn University researchers used 100 steers of about 75% Bos taurus - 25 % Bos indicus genetics to evaluate effects of Tasco in a finishing program. Half of the steers were fed Tasco for 14 days starting after 45 days on feed and again for 14 days before slaughter.

Tasco feeding resulted in significantly higher marbling scores and higher percent grading Choice and tended to have more desirable Yield Grade. However, Tasco had no significant effect on machine tenderness or taste panel evaluation of strip loin or inside round steaks, except that initial tenderness (before aging) of inside round steaks was significantly better for Tasco. Tasco steaks generally showed better color and less discoloration during aging and presentation in the retail meat case. The authors concluded that Tasco supplementation “increases carcass quality and prolonged retail shelf life”. (J. Animal Sci. 85:754)





EFFECT OF AGING TIME AND QUALITY GRADE ON TENDERNESS
We know that aging of beef generally improves tenderness. But does it make any difference what the beef is? Colorado State University researchers evaluated tenderness of 17 individual muscles from both Select and upper 2/3 Choice carcasses. Carcasses were selected randomly 16 times over a 7-month period at a large packing plant. Two days after slaughter, aging of boneless subprimal cuts was initiated at 35-36 degrees F. Tenderness determinations (Warner-Bratzler shear force) were made before aging commenced (2 days post-slaughter) and then of aged samples at 4, 6, 10, 14, 21, and 28 days after slaughter. At 2 days, Choice muscles averaged 1.08 lb lower shear force (more tender) than Select. Aging increased tenderness of all muscles. However, aging effects were more pronounced in Select; at 28 days, Choice averaged only 0.62 lb more tender. Aging response was more rapid in Choice; of total tenderness measured at 28 days, an average of 85% had occurred by 14 days in Choice, compared to an average of only 68% in Select. The effect of aging on tenderness varied greatly for different muscles; in general, the toughest muscles (at day 2) improved most by aging. The authors concluded that “if postmortem aging is managed with respect to individual muscle and quality grade, certain Select muscles may be able to be substituted for analogous premium Choice muscles in commercial merchandizing systems”. There are numerous articles on tenderness seems like and we'll probably be in quest of it for some time to come. It'd be nice if it was as simple as crossing a to b = c

Could you point me to such articles as I don't remember any articles emphasizing a nutrition link. All the stuff I've read points to the combination of genetics (i.e. the tenderness gene's) and management (pre and post slaughter).

I don't understand this statement from the A&M study you quoted. It seems contradictory

Tasco is nothing more than glorified Kelp meal and does very little other than provide a small amount of iodine. Both kep meal named "Tasco" and regular kelp meal are available from Acadian Seaplants with the regular product costing a fraction of what you will pay for Tasco
