My kids have raised a couple jersey steers that are going into the locker today. I am not sure they should charge; we usually just charge market price but I have no idea what a finished jersey steer is worth.
How do they compare to holsteins? How about yeild percentage?
By the way, I now know first hand why jersey calves are so cheap, these 2 are about a week shy of their 2nd b-day and I still am not sure they are ready to go. They are about 4 feet wide in the front shoulders and about 15" across the backside. At least it was a good experience for the kids - they all want to reinvest their money in more calves. The girls of course think they need an ipod first though.
