What type of grain? and how not to get her fat?

It really isn't any different than feeding a beef heifer. You don't want any heifer to get too fat because it can affect her fertility.

You have to control the amount that you are feeding to keep her at her optimum weight. That depends on her age, frame and weight.

Talk to your feed store owner and ask what type of creep or beef feeds are available. We prefer to feed a brand that does not contain urea. The feed store owner should be able to give you an idea of how much to feed. Weigh the feed, don't use a scoop or coffee can as a measure.

What are you planning to do with her? Eat her or breed her?

Breed her.
