Does anyone know where I can order a canvas top for a 20' gooseneck cattle trailer

Since you're in Lufkin, there's a man in Henderson who custom makes them to fit your trailer. Don't have his name with me here at work. You might try and call the trailer dealer (Wilkerson) there and ask if they know his name.
