Butchered a beef yesterday.

He was born crippled with one front leg resembling he was playing a fiddle. Just over 2 years old and his good front was getting tired of carrying all the weight. He dressed 560.

Is it still cool enough up there to hang him a good while? Do you have a room/saws all setup?

There are some jobs others are more qualified to do Murray. I dislike cutting meat immensely! There are two local meat cutters with all the facilities for hanging to freezing.

I sure understand that!!

I have a couple friends whose set up cold rooms for deer processing and what not. Was curious if that's what yall did.

I'd like to know how. But I don't want to get that involved setting up a room with saws and knives and tables and everything required to do so.
 
We cut our own elk and deer. No saws. It is all boneless when we are done. Just a piece of 3/4 inch plywood on saw horses covered with wrapping paper for a table. A lot of a deer and about a quarter of an elk gets chunked and the wife cans it. Beef goes to the meat shop to be processed.
